The term "trifti" refers to the crisp, crumbly texture of these squares. Do not overwork the dough, as this will make them tough rather than crumbly.
If your cheese is very salty, reduce or omit the added salt in the dough.
These squares can be shaped into "bastounakia" (little canes) which should be about half a finger wide and one finger long.
Store in an airtight tin container. They will keep for several weeks and remain crisp.
The smaller the squares, the better, as they are quite rich.
