Description

This Ultimate Flourless Chocolate Cake is a decadent treat for serious chocolate lovers. Unlike traditional cakes, this recipe relies on eggs and butter for structure, creating a dense, fudgy texture that melts in your mouth. The deep flavor comes from high-quality semisweet chocolate, enhanced by a hint of instant coffee which amplifies the cocoa notes without tasting like coffee. The cake features a delicate, crackly crust on top and a moist, tender crumb within. It is elegantly paired with a vibrant raspberry coulis, providing a tart contrast to the richness of the chocolate, and finished with light whipped cream. Perfect for special occasions, anniversaries, or when you want to impress guests with a sophisticated, homemade dessert.

Ingredients

Directions

  1. Position a rack in the center of the oven and preheat to 350&# 194;°F (175ðC).
  2. Butter the bottom and sides of a 9-by-2 1/2-inch round springform pan. Line the bottom with a round of parchment or waxed paper and butter the paper.
  3. In a food processor fitted with the metal blade, process the semisweet chocolate, bittersweet chocolate, granulated sugar, and instant coffee granules until finely ground.
  4. With the motor running, pour the boiling water through the feed tube and process until the mixture is smooth and combined.
  5. Add the softened unsalted butter in chunks and process until fully incorporated and smooth.
  6. Add the eggs one at a time, processing after each addition until incorporated. Add the vanilla extract and process briefly to combine.
  7. Pour the batter into the prepared pan. Smooth the top with a spatula.
  8. Bake for 55 to 60 minutes, until the edges of the cake are puffy and the center is set but still slightly soft.
  9. While the cake bakes, make the raspberry coulis: In a medium saucepan, combine the frozen raspberries and granulated sugar.
  10. Cook over medium heat, stirring constantly with a wooden spoon, until the sugar dissolves and the raspberries break down into a sauce.
  11. Remove from heat and stir in the black raspberry liqueur. Strain if a smooth coulis is desired, or leave chunky. Let cool.
  12. To make the whipped cream: In a chilled large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  13. Once the cake is baked, let it cool in the pan on a wire rack for 10 minutes. Run a thin-bladed knife around the edge to loosen.
  14. Invert the cake onto a serving plate. Peel off the parchment paper.
  15. Refrigerate the cake until completely cool, about 1-2 hours.
  16. To serve, spread a thin even layer of whipped cream over the top of the cake or pipe rosettes.
  17. Drizzle raspberry coulis onto each dessert plate. Slice the cake with a sharp knife, wiping the blade clean between slices. Garnish with fresh raspberries if desired.
