  1. Preheat oven to 350°F (175°C). Grease and flour an oblong baking pan.
  2. Sift flour, baking powder, and salt together into a bowl. Sift again to ensure a light texture.
  3. In a large mixing bowl, cream the shortening and sugar together until light and fluffy.
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Alternately add the flour mixture and milk to the shortening mixture, beginning and ending with the flour. Mix until just combined.
  6. Pour batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake bakes, prepare the icing. In a large heavy saucepan, combine 2 1/2 cups of sugar, 1 cup of milk, and corn syrup.
  8. Place the saucepan over medium heat and bring to a boil, stirring occasionally to dissolve sugar.
  9. Meanwhile, in a heavy iron skillet, brown the remaining 1/2 cup of sugar over medium heat, stirring constantly until it melts and turns a deep amber color.
  10. Carefully add 1/2 cup of milk to the browned sugar in the skillet. Stir well to combine (mixture will bubble vigorously).
  11. Pour the browned sugar mixture into the boiling milk and sugar mixture in the saucepan.
  12. Continue cooking the icing mixture, stirring constantly, until it reaches the soft-ball stage (234°F (112° (116°C)C)-240°F) or forms a soft ball when dropped into cold water.
  13. Remove the icing from heat. Beat in the butter until smooth and creamy.
  14. Stir the icing until it thickens slightly and is cool enough to spread but still pourable.
  15. Spread the warm caramel icing over the cooled cake using a wet knife to ensure a smooth finish.
