Directions

  1. Remove seeds and membranes from the green peppers, then chop them coarsely.
  2. Place half of the chopped peppers and 3/4 cup of vinegar in an electric blender.
  3. Process on high speed until the mixture is completely smooth.
  4. Repeat the blending process with the remaining chopped peppers and the remaining 3/4 cup of vinegar.
  5. Pour the pureed pepper mixture into a large Dutch oven.
  6. Stir in the crushed red pepper, sugar, and salt.
  7. Bring the mixture to a rolling boil over high heat, stirring frequently to prevent scorching.
  8. Add the liquid fruit pectin to the boiling mixture.
  9. Continue to cook, stirring often, for 30 minutes or until the mixture thickens enough to sheet off a metal spoon.
  10. Quickly ladle the hot jelly into sterilized jars, leaving 1/2-inch headspace at the top.
  11. Immediately cover the surface of the jelly in each jar with a 1/8-inch layer of melted paraffin wax.
  12. Seal the jars with metal lids and screw on the metal bands tightly.
