Wash the pork thoroughly and cut into 2 cm cubes.

Slice the onion and chilies. Crush the garlic, ginger, cardamoms, and cloves together.

Place the pork cubes in a heavy-bottomed pan.

Cover the pork with water and add the crushed garlic, ginger, cardamoms, cloves, chili powder, vinegar, turmeric, fenugreek, and salt.

Mix well to combine all ingredients.

Bring the mixture to a boil, then reduce the heat to low.

Simmer uncovered or partially covered until the pork is tender, approximately 1 to 1.5 hours.
