  3. Cook the sugar mixture to the soft-ball stage (238°F (114° (116°C)C)–240°F), using a candy thermometer to monitor the temperature.
  4. Remove the sugar syrup from heat and let it cool for a few minutes so it is warm but not boiling.
  5. In a large bowl, beat the remaining corn syrup with an electric mixer on high speed. Gradually add the warm sugar syrup, one tablespoon at a time, while beating continuously.
  6. Add the softened gelatin mixture to the bowl and continue beating on high speed for 7 to 8 minutes, until the mixture thickens and becomes frothy.
  7. Stir in the vanilla extract until well combined.
  8. Pour the mixture into a well-greased 7x9-inch pan.
  9. Refrigerate for at least 4 hours, or until fully set and firm.
