  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a shallow bowl, combine beaten eggs, garlic powder, salt, and 1/4 teaspoon of pepper; whisk well.
  3. Place veal cutlets in the egg mixture, turning to coat both sides thoroughly. Cover and let stand for 15 minutes.
  4. Remove cutlets from egg mixture and dredge well in fine dry breadcrumbs, pressing gently to adhere.
  5. Heat vegetable oil in a large skillet over medium-high heat. Fry cutlets until browned on each side, about 2-3 minutes per side.
  6. Transfer fried cutlets to a lightly greased 13x9x2 inch baking dish.
  7. In a saucepan, combine 15 oz tomato sauce, 8 oz tomato sauce, brown sugar, oregano, and remaining 1/2 teaspoon pepper. Bring to a boil, stirring frequently.
  8. Pour the hot sauce evenly over the veal cutlets in the baking dish. Sprinkle with grated Parmesan cheese.
  9. Cover the dish with foil and bake for 30 minutes.
  10. Remove foil, arrange mozzarella cheese slices on top of the cutlets, and bake uncovered for 5 to 10 additional minutes until cheese is melted and bubbly.
