  3. Cut the cauliflower into florets :
  4. Cut the zucchini into rounds :

  8. melt the butter over a low

  15. Simmer gently , uncovered, for 10 minutes.

  17. cook , uncovered, until the vegetables are just tender 3
  18. Add the coconut

  20. simmer for a further 5 minutes.
  21. Serve on a large platter, garnished with fresh coriander leaves.
