Ingredients

Directions

  1. Prepare the vegetables by peeling and cutting the carrots into 2-inch pieces, quartering the onions, and cutting the celery (including tops) into 2-inch pieces.
  2. Peel and quarter the fresh tomatoes, or drain the canned plum tomatoes if using.
  3. In a large saucepan or stockpot, combine the carrots, onions, celery, tomatoes, bay leaf, parsley bunch, and salt.
  4. Cover the vegetables with 3 quarts of water.
  5. Place the pot over moderate heat and bring the water to a boil.
  6. Once boiling, reduce the heat to moderately low to maintain a gentle simmer.
  7. Simmer the broth uncovered for 2 hours, allowing the flavors to meld.
  8. Remove the pot from heat and strain the broth through a fine-mesh sieve to remove all solids.
  9. Discard the solids and use the strained broth immediately or store according to notes.
