  1. An Italian version of the omelet.
  2. Mince garlic and saute in oil in a 7" skillet until softened.
  3. Add vegetables and seasonings and cook very briefly, just to heat.
  4. Beat egg substitute and egg whites together;stir in Parmesan cheese.
  5. Pour over vegetable mixture and cook until golden on the bottom.
  6. Turn over with a broad spatula and cook until other side is golden, or, without turning.
  7. place under broiler until top is set and very lightly browned.
  8. Serve from skillet
