Ingredients

Directions

  1. Rinse the brown rice, cover with boiling water, and soak for several hours to soften. Drain and rinse again.
  2. Place the rice in a pot, cover with fresh water, add a pinch of salt and turmeric. Bring to a boil, then reduce heat to low and simmer until water is absorbed and rice is tender, about 20 minutes. Keep covered.
  3. While rice cooks, chop green beans and carrot into small pieces. Steam the beans, carrots, and peas until just tender-crisp. Drain and set aside.
  4. Finely chop the onion, crush the garlic, grate the ginger, and chop the tomato.
  5. Heat margarine in a skillet over medium heat. Add the chopped onion and sauté until it begins to brown and soften.
  6. Add the garlic and grated ginger to the skillet. Cook for another minute until fragrant.
  7. Reduce heat to low and stir in the coriander, cumin, and garam masala. Cook briefly to toast the spices.
  8. Add the chopped tomato to the skillet and cook for one minute until it starts to break down. Remove from heat.
  9. Stir the steamed vegetables (beans, carrots, peas) into the spiced onion mixture. Set aside.
  10. Grease an ovenproof dish. Spread half of the cooked rice on the bottom. Spoon the vegetable mixture evenly over the rice layer. Top with the remaining half of the rice.
  11. Cover the dish tightly with a lid or aluminum foil. Bake at 350°F (180°C) for about 30 minutes to heat through and meld flavors.
  12. While the pilau bakes, toast the slivered almonds under a hot broiler or in a dry pan until lightly browned and fragrant. Watch closely to prevent burning.
  13. Remove the pilau from the oven. Let it rest for 5 minutes, then sprinkle with toasted almonds before serving.
