Drain, rinse, and chop the rehydrated mushrooms into bite-sized pieces.

Cook rice vermicelli according to package instructions, then rinse with cold water and drain well.

Prepare all fillings by ensuring bamboo shoots are drained and thinly sliced, and carrots are grated.

Fill a shallow bowl with warm water for dipping the rice paper.

Dip one sheet of rice paper into the warm water for a few seconds until pliable but still slightly firm.
