Ingredients

Directions

  1. Drained Chopped parsley or chives For
  2. Combine tomatoes, broth, rice, garlic, bay leaves, basil, thyme and hot pepper sauce in a lage saucepan.
  3. Cover and bring to a boil over high heat.
  4. When rice is cooking,
  5. cut green pepper into 1 inch pieces and
  6. stir into stew
  7. heat to medium,
  8. stir in black eyed peas,
  9. cover and
  10. simmer for 10 to 12 minutes, stirring once.
  11. Remove and discard bay leaves.
  12. Sprinkle with parsley if desired.
  13. This is a Louisiana inspired stew, rich and fairly thick.
  14. For a thinner stew, add additional broth.
