The soup may be prepared ahead of time up to the point before adding the egg yolk mixture. Store covered in the refrigerator for up to 2 days. Just before serving, bring the soup to a gentle simmer, then proceed with tempering and adding the egg yolk mixture.
To ensure the soup remains silky, never allow it to boil after adding the egg yolk and cream mixture. High heat will cause the eggs to curdle and separate.
For a vegetarian version, substitute the chicken stock with a high-quality vegetable broth.
If the soup is too thick after reheating, thin it with a little extra stock or water. If it is too thin, simmer gently for a few more minutes to reduce.
