Ingredients

Directions

  1. Bring a large pot of salted water to a boil. Add vermicelli and cook according to package directions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. While pasta cooks, wash parsley and spinach thoroughly. Shake off excess water but leave leaves slightly damp.
  3. In a blender or food processor, combine parsley, spinach, olive oil, Parmesan cheese, Romano cheese, chopped walnuts, garlic, salt, and dried basil.
  4. Process until mixture forms a thick puree with some small specks of herbs still visible. If the sauce is too thick, add reserved pasta water one tablespoon at a time until desired consistency is reached.
  5. Return drained hot pasta to the pot. Add the sauce and toss vigorously to coat evenly. The residual heat will slightly loosen the sauce.
  6. Serve immediately on warm plates, garnished with walnut halves.
