  1. Grind cumin seeds, dried red chilies, black peppercorns, cardamom seeds, cinnamon sticks, black mustard seeds, and fenugreek seeds in a spice grinder until fine.
  2. Transfer the ground spices to a bowl and add vinegar, salt, and brown sugar; mix well to form the vindaloo paste.
  3. Heat 2 tablespoons of vegetable oil in a heavy pot over medium heat and fry the onion rings until brown and crisp.
  4. Remove the fried onions with a slotted spoon and puree them in a blender with 2-3 tablespoons of water.
  5. Mix the onion puree into the vindaloo paste in the bowl.
  6. Pat the pork cubes dry with paper towels and trim any large pieces of fat.
  7. Blend the chopped ginger and peeled garlic with 2-3 tablespoons of water until a smooth paste forms.
  8. Heat the remaining oil in the pot over medium-high heat and brown the pork cubes in batches, removing them to a bowl as they cook.
  9. Reduce heat to medium and add the ginger-garlic paste to the pot, stirring for a few seconds.
  10. Add ground coriander and turmeric to the pot and stir for another few seconds until fragrant.
  11. Return the browned pork and any accumulated juices to the pot, then add the vindaloo paste and 1 1/3 cups of water.
  12. Bring the mixture to a boil, then cover and simmer gently for about 1 hour, or until the pork is tender.
  13. Stir occasionally during cooking and adjust seasoning if needed before serving.
