  2. Clean the regular mushrooms and cut them in half if they are large; wipe shiitake mushrooms clean, discard stems, and slice caps into 1/2-inch wide strips.
  3. Heat 1 tablespoon of salad oil in a 12-inch nonstick skillet over medium heat.
  4. Add the red onion wedges to the skillet and cook until just tender and slightly caramelized, stirring occasionally.
  5. Using a slotted spoon, remove the cooked onions from the skillet and transfer them to a large mixing bowl.
