Ingredients

Directions

  1. Peel and clean the carrots and turnips; trim the green beans; peel the tomatoes.
  2. Cut the carrots, turnips, celery, and peeled tomatoes into julienne strips, approximately 2 inches in length.
  3. Place the prepared vegetables in a bowl of water with a few dashes of vinegar to keep them fresh while you prepare the other components.
  4. Heat chicken broth along with 1 tablespoon of butter in a saucepan over medium heat.
  5. Simmer the cut carrots, turnips, celery, and tomatoes in the broth separately, cooking for 1 to 4 minutes until they are tender but still firm.
  6. In a separate pot, bring salted water to a boil. Cook the green beans and Chinese pea pods until they are tender-crisp.
  7. Immediately plunge the cooked green beans and peas into ice water to stop the cooking process, then drain well.
  8. Arrange the mache and radicchio on a large serving platter to create a bed for the vegetables.
  9. Artfully arrange the warm simmered vegetables and the blanched green beans and peas on top of the lettuce base.
  10. In a small bowl, combine the finely chopped shallots, chopped parsley, 6 tablespoons of vinegar, and oil. Season with salt and pepper to taste.
  11. Drizzle the vinaigrette evenly over the arranged vegetables.
  12. Garnish the salad generously with the julienned fresh truffles just before serving.
