Royal cumin (black cumin) or shahi jeera gets its name from the royal Moghul dishes it was most used in. It is available at Indian markets. If unavailable, regular cumin seeds work as a substitute.
The original recipe text mentions 1/4 tsp ground mace, 3 lamb rib chops (4 oz each), 1/2 cup water (total), 1/2 tsp saffron threads dissolved in 2 tbsp hot water, salt to taste, 1/2 cup peas (fresh or frozen), and 2 tbsp minced fresh cilantro or parsley. Ensure these are on hand.
