Description

This International salad features Wheat berries, Water, Oil, Orange juice, Red wine vinegar. The flavors come together beautifully. Perfect for lunch, picnics, or as a light side dish. Ingredients

  1. Granny Smith, halved/cored/ -
  2. cut into small
  3. dice 2 tb Mint, fresh; fine chopped ;salt & pepper to taste 1/2 c Cashews; toasted/chopped 1.
  4. Place wheat berries and water in a large saucepan.
  5. Bring to a boil over high heat, stirring frequently.
  6. Reduce heat to medium and simmer until very tender, about 1 hour and 10 minutes.
  7. Drain and transfer to a large bowl.
  8. Add oil, orange juice, vinegar, coriander, caraway seeds, apples, mint, salt and pepper.
  9. Toss well.
  10. Just before serving, add cashews; mix well.
  11. But wheat berries add a pleasingly chewy texture
