Note
The garlic should be roasted until it is very soft and sweet; under-roasted garlic will be pungent and harder to squeeze.
If fresh oregano is unavailable, use dried oregano, but add it earlier in the process to allow the flavors to bloom.
You can substitute cannellini or navy beans for Great Northern beans.
For a nuttier flavor, toast the croutons in a pan with a little olive oil instead of baking them.
