  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Remove one clove from the garlic head, peel it, and cut it in half lengthwise.
  3. Rub the cut garlic clove on both sides of the two bread slices.
  4. Cut the garlic-rubbed bread into 1/2 inch cubes and spread them on a baking sheet.
  5. Remove the loose papery skin from the remaining garlic head and slice about 1/2 inch off the top to expose the cloves.
  6. Wrap the garlic head tightly in aluminum foil and place it on the same baking sheet with the bread cubes.
  7. Bake for 10 minutes, or until the croutons are crisp and golden brown.
  8. Remove the croutons from the oven and set aside to cool.
  9. Return the wrapped garlic to the oven and roast for an additional 20 to 25 minutes, until the cloves are very soft and golden.
  10. Remove the garlic from the oven, unwrap, and let it cool for 5 minutes.
  11. Separate the garlic cloves and squeeze the soft pulp into a small bowl.
  12. Mash the garlic pulp with a fork until smooth.

The garlic should be roasted until it is very soft and sweet; under-roasted garlic will be pungent and harder to squeeze.

If fresh oregano is unavailable, use dried oregano, but add it earlier in the process to allow the flavors to bloom.

You can substitute cannellini or navy beans for Great Northern beans.

For a nuttier flavor, toast the croutons in a pan with a little olive oil instead of baking them.
