  1. Preheat oven to 350&# 194;°F (175°C).
  2. Process chocolate wafer cookies into fine crumbs.
  3. Mix cookie crumbs with 5 tablespoons melted butter.
  4. Press mixture firmly into the bottom of a lightly buttered 10-inch springform pan to form the crust.
  5. Melt 8 oz white chocolate with 1/2 cup heavy cream until smooth.
  6. Allow white chocolate mixture to cool to room temperature.
  7. Beat 2 pounds cream cheese with 1 1/2 cups sugar until light and fluffy.
  8. Fold the cooled white chocolate mixture into the cream cheese blend.
  9. Add 4 eggs one at a time, beating well after each addition.
  10. Stir in 1/3 cups freshly squeezed lemon juice, 1 tablespoon grated lemon zest, and 1/2 tsp lemon extract.
  11. Pour filling over the prepared crust.
  12. Bake for 45 to 50 minutes until the center is almost set.
  13. Remove from oven and let cool completely at room temperature.
  14. Refrigerate cheesecake for at least 4 hours or overnight.
  15. For the glaze, combine 6 oz chopped bittersweet chocolate, 1 oz chopped unsweetened chocolate, and 2 tablespoons light corn syrup.
  16. Heat the chocolate and syrup mixture until melted and smooth.
  17. Remove from heat and stir in 3 tablespoons butter until incorporated.
  18. Spread the warm chocolate glaze over the chilled cheesecake and smooth the top.
