Boil or microwave the potatoes until nearly done, then peel them once cool enough to handle.

In a skillet, fry the sliced onions in a little canola oil until soft.

Add the chopped cabbage, chopped cauliflower, and 6 cloves of the crushed garlic to the onions. Fry until the vegetables are just tender.

In a small bowl, melt the cream cheese. Whisk in the soymilk, yogurt, and chopped dill until smooth.

Drain and rinse the white kidney beans, then add them to the vegetable mixture.

Pour the cream cheese sauce over the vegetables and beans. Mix thoroughly and season with salt and pepper to taste.

Preheat oven to 325°F (165°C). Oil a baking dish.

Slice the potatoes into rounds. Place half of the potato slices on the bottom of the prepared baking dish.
