  1. In a heavy 4-quart saucepan or Dutch oven, melt the butter over medium heat.
  2. Add the rinsed wild rice and chopped celery to the pan.
  3. Saut the rice and celery mixture until lightly browned and fragrant.

  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25 minutes.

  7. Remove from heat and discard the bay leaf.

  9. Let the stuffing cool slightly until safe to handle.
  10. To serve as a casserole: Spoon the mixture into a greased 2 1/2-quart baking dish.
