Pat the chicken dry with paper towels. Rub the entire chicken with 2 tablespoons of unsalted butter, ensuring you get under the skin on the breast.

Cut 1 yellow onion into fourths and 3 tangerines into fourths. Season these pieces lightly with salt and pepper.
