Ingredients

Directions

  1. Dissolve the yeast in the lukewarm water in a large bowl; let stand for 5-10 minutes until foamy.
  2. Stir in the all-purpose flour, sugar, and salt until a smooth batter forms.
  3. Cover the bowl and let the batter rise in a warm place for 30 minutes, or until bubbly and increased in volume.
  4. In a small saucepan, combine the water, brown sugar, and shortening; heat gently until the shortening melts and sugar dissolves.
  5. Allow the liquid mixture to cool slightly so it is warm but not hot to the touch, then stir it into the yeast batter.
  6. Gradually add the whole wheat flour, mixing until the dough is too stiff to stir with a spoon.
  7. Turn the dough out onto a lightly floured surface and knead for 10 minutes until smooth and elastic.
  8. Place the dough in a lightly greased bowl, turning to coat; cover and let rise in a warm place for 1 1/2 hours, or until doubled in size.
  9. Punch down the dough to release air bubbles, then divide in half.
  10. Shape each half into a loaf and place into two greased 9x5-inch loaf pans.
  11. Cover and let rise again for 45 minutes, or until the dough crests the top of the pans.
  12. Preheat the oven to 375°F (190°C).
  13. Bake for 30-35 minutes, or until the loaves sound hollow when tapped on the bottom.
  14. Remove from pans immediately and cool on wire racks before slicing.
