  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Prepare the Whole Wheat Calzone Dough according to package or recipe instructions.
  3. Heat olive oil in a 10-inch nonstick skillet over medium heat.
  4. Add diced eggplant, sliced zucchini, chopped green pepper, sliced onion, and crushed garlic to the skillet.

  13. Fold the edges under and pinch securely to seal the calzone.
  14. Place the sealed calzones on the prepared cookie sheet.
  15. Brush the tops of the calzones with beaten egg white.
  16. Bake for 25 minutes, or until the crust is golden brown and the cheese is melted.
