Description

This luxurious Wild Mushroom Risotto transforms simple Arborio rice into a velvety, comforting masterpiece. The secret lies in using dried porcini mushrooms, which infuse the dish with an intense, earthy umami that fresh mushrooms alone cannot achieve. As you slowly ladle in warm chicken stock, the rice releases its starch, creating a naturally creamy texture without needing heavy cream. The addition of dry white wine adds acidity to balance the richness, while a final stir of cold butter and Parmigiano-Reggiano gives it a glossy, restaurant-quality finish. Perfect for a cozy weeknight dinner or an elegant date night, this dish is satisfying, aromatic, and deeply flavorful. It pairs beautifully with a crisp green salad or a glass of Chianti.

Directions

  1. Place the dried porcini mushrooms in a bowl and cover with 1 cup of warm water. Let soak for 30 minutes to rehydrate.
  2. Drain the porcini mushrooms, reserving the soaking liquid. Strain the liquid through a fine-mesh sieve lined with cheesecloth or a paper towel to remove grit, and set the clear liquid aside. Chop the rehydrated porcini mushrooms.
  3. In a saucepan, combine the chicken stock and the reserved strained porcini soaking liquid. Heat over medium heat until hot, then reduce heat to maintain a gentle simmer.
  4. In a medium, heavy-gauge saucepan, melt 2 tablespoons of butter over medium-high heat.
  5. Add the Arborio rice to the melted butter. Stir constantly, toasting the rice until it starts to sizzle and pop, about 1 minute. The rice should not brown, just become translucent at the edges.
  6. Add the chopped porcini mushrooms and the fresh wild mushrooms to the rice. Stir to combine.
  7. Pour in the dry white wine. Stir constantly until the wine is almost completely absorbed, about 2 minutes.
  8. Add enough hot stock mixture to just cover the rice. Lower the heat to maintain a vigorous simmer. Stir occasionally.
  9. When the stock is almost completely absorbed, add more hot stock to cover the rice again. Add a pinch of salt.
  10. Continue adding stock one ladleful at a time, stirring occasionally, waiting until the liquid is almost gone before adding more. This process should take about 20 minutes.
  11. Taste the rice for doneness; it should be al dente (tender but with a slight bite). If it is still hard, continue adding stock until tender.
  12. Remove the pan from the heat. Add the remaining 2 tablespoons of butter and stir vigorously for a few seconds to emulsify and create a creamy texture.
  13. Stir in the chopped parsley and grated Parmigiano-Reggiano. Taste and add more salt if needed. If the risotto is too thick, stir in a little more warm stock to loosen it to a moist, creamy consistency (it should flow slowly when spooned).
  14. Serve immediately while hot and creamy.
