  1. Sweet yellow pepper strips (optional) Fresh parsley sprigs (optional)
  2. Place uncooked wild rice in a strainer.
  3. Run cold water over rice for 1 minute, lifting rice to drain well.
  4. In a med saucepan combine chicken broth, onion, tarragon, pepper, and rinsed rice.
  5. Bring to boiling; reduce heat.
  6. Cover and simmer about 45 minutes or till rice is done.
  7. Stir in bulgur and parsley.
  8. Cover and let stand 5 minutes.
  9. Fluff with a fork.
  10. Garnish with yellow pepper strips and parsley sprigs, if desired.
