Description

This International salad features Wild rice, uncooked. The flavors come together beautifully. Perfect for lunch, picnics, or as a light side dish. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

Ingredients

Directions

  1. Seasoned salt to taste 2 c Chicken, cooked, diced 1 1/2 c Grapes, green, halved 1 c Water chestnuts, sliced, -drained 3/4 c Mayonnaise, light 1 c Cashews; optional Lettuce leaves
  2. Cook rice according to package directions, omitting salt or substituting seasoned salt if desired.
  3. Drain well; cool to room temperature.
  4. Spoon into a large bowl; add chicken, grapes, water chestnuts and mayonnaise.
  5. Toss gently with a fork.
  6. Cover and chill.
  7. Just before serving, add cashews if desired.
  8. Serve on lettuce leaves or line a bowl with lettuce leaves and fill with salad
