These Wurtfest Sausage Rolls are a classic comfort food appetizer featuring a tender, slightly sweet yeast dough wrapped around savory sausage strips. The dough is made with shortening and sugar for a rich, flaky texture that puffs up beautifully during baking. The sausages are gently simmered first to ensure they are cooked through and juicy before being encased in the dough. These rolls are perfect for festive gatherings, church suppers, or as a hearty snack. The combination of the soft, pillowy pastry and the spiced sausage filling creates a satisfying bite that pairs well with mustard or a simple dipping sauce. Make a batch ahead of time, as the dough improves with an overnight rest in the refrigerator.

Ingredients

Directions

  1. Combine yeast, warm water, and 1 teaspoon of sugar in a small bowl; set aside for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine shortening, 1/2 cup sugar, salt, hot water, and beaten eggs; beat well until smooth.
  3. Stir in the activated yeast mixture.
  4. Add 2 cups of flour and beat well until incorporated.
  5. Stir in the remaining 2 to 2-1/2 cups of flour to form a soft, pliable dough.
  6. Cover the bowl with plastic wrap or a damp cloth and refrigerate the dough overnight.
  7. Remove dough from refrigerator and divide into three equal portions.
  8. On a floured surface, roll out one portion of dough into a circle approximately 1/4 inch thick.
  9. Use a 2-inch round cutter to cut out circles from the dough.
  10. Simmer sausage strips in a covered pan with a little water for about 5 minutes to cook through; drain and set aside.
  11. Place one sausage strip in the center of each dough circle.
  12. Moisten the edges of the dough with water, fold one side over the sausage, and press edges firmly to seal.
  13. Repeat the process with the remaining dough portions and sausage strips.
  14. Place rolls on a greased baking sheet, cover lightly, and let rise for about 1-1/2 hours, or until doubled in size.
  15. Preheat oven to 350&# 194;°F (175°C).
  16. Bake rolls for 10 to 12 minutes, or until golden brown.

Note

The dough benefits significantly from the overnight refrigeration, which allows the flavors to develop and makes the dough easier to handle.

Ensure the sausage strips are fully cooked during the simmering step, as the baking time is relatively short.

If the dough is too sticky to roll, add a little more flour, one tablespoon at a time. If it is too dry, add a teaspoon of water.

These rolls can be frozen before baking. Shape the rolls, place them on a baking sheet to freeze solid, then transfer to a freezer bag. Bake from frozen, adding 2-3 minutes to the baking time.

Serve warm with your favorite mustard or a sweet and spicy dipping sauce.
