  1. Peel the yam or sweet potato and cut it into large pieces.
  2. Place the yam pieces in a saucepan and cover with water.
  3. Boil until soft, about 15 minutes, until a fork tines push easily into the yam.
  4. Drain the yam thoroughly.
  5. Puree the yam with 2 tablespoons of water in a blender or food processor, or mash by hand with a fork or potato masher.
  6. Measure out 1 cup of the puree for the recipe and save the rest for another use.
  7. Preheat the oven to 325&# 194;°F (163ðC).
  8. In a large bowl or food processor, combine 1 cup all-purpose or whole wheat flour, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, and 2 1/2 teaspoons raw sugar or brown sugar.
  9. Cut in 1 tablespoon softened butter or margarine until the mixture resembles coarse meal.
