  1. Slice the lean pork into thin 3-inch strips.
  2. Combine the pork slices with 1 tablespoon light soy sauce, 1 tablespoon rice wine, salt, and sesame oil. Mix well to coat.
  3. Cut the fresh chiles in half lengthwise and remove the seeds.
  4. Heat a wok or large sauté pan over high heat until smoking hot.
  5. Add 1 1/2 tablespoons of peanut oil and the marinated pork. Stir-fry for 1 minute until just cooked through.
  6. Remove the pork from the wok using a slotted spoon and set aside.
  7. Add the remaining 1 1/2 tablespoons of peanut oil to the hot wok.
  8. Add the chiles, garlic, red chili powder, and Sichuan peppercorns (if using). Stir-fry for 30 seconds until fragrant.
  9. Add 1 tablespoon water, the remaining 1 tablespoon rice wine, 1 teaspoon soy sauce, and 1 teaspoon sugar. Cook for 30 seconds.
  10. Return the pork to the wok and toss everything together for 1 minute to heat through.
