Ingredients

Directions

  1. Preheat the oven to 325&# 194;°F (163ðC).
  2. In a food processor or large bowl, combine the flour and salt.
  3. Add the oil and mix until the mixture resembles coarse meal.
  4. Add the yogurt and blend to form a cohesive dough ball. Add an additional tablespoon of yogurt if needed.
  5. Divide the dough into 2 equal portions.
  6. On a floured surface, roll each portion into a rectangular shape about 1/8 inch thick.
  7. Transfer the rolled dough to a large baking sheet.
  8. Score the surface into 2-inch squares with a sharp knife, being careful not to cut all the way through.
  9. Prick each square 2 or 3 times with the tines of a fork.
  10. Bake for 15 to 20 minutes, or until light brown. Turn over once during baking and remove any edge crackers that brown early.
  11. Cool on a rack before serving.

Note

The flavor of these crackers varies subtly with the type of yogurt used.

A bit of sweet jam or honey complements these tangy crackers. They are also excellent with almost any dip.

For a sweeter cracker, substitute sweetened yogurt for plain yogurt. Lemon and berry flavors work well. If using fruit-at-the-bottom yogurt, stir it first.

The color can be affected by the type of yogurt used.

Substituting 1/3 cup toasted wheat germ for the same amount of flour lends a nutty flavor.
