Description

A savory and satisfying main dish featuring boneless chicken, fresh spinach, and aromatic herbs wrapped in crisp filo dough. Topped with feta and kasseri cheese, this Mediterranean-style bake is perfect for family dinners. The layers of filo create a golden, flaky crust that encases the flavorful filling.

Directions

  1. Thaw filo dough according to manufacturer's instructions, which may take overnight.
  2. Preheat oven to 350°F (177°C).
  3. Brush bottom and sides of a deep 10-inch pie dish with some of the olive oil.
  4. Rinse spinach well and place in a microwave-safe bowl.
  5. Microwave on High for 1 to 2 minutes, stirring once, until wilted and cooked through. Alternatively, cook spinach in a dry skillet until wilted.
  6. When cool enough to handle, squeeze the moisture from the spinach.
  7. Chop spinach into fine pieces and place in a medium mixing bowl.
  8. Separate 1 egg into 2 small bowls. Break the remaining egg into the bowl with the egg white and beat lightly. Set both bowls aside.
  9. Dice chicken breasts and place in the bowl with the spinach.
  10. Pour in ouzo (if using).
  11. Add celery, green onions, mint, basil, marjoram, tarragon, pepper, feta, and kasseri.
  12. Pour in the beaten egg mixture and mix thoroughly.
  13. Place filo on a clean counter and keep covered with plastic wrap or a damp towel.
  14. Brush a sheet with olive oil before placing it in the pie dish.
  15. Start by placing the 1st sheet of filo with half in the dish and half extending beyond the edge.
  16. Place the second sheet on top, extending over the edge in the opposite direction.
  17. Place 2 more sheets in a strip at right angles to the first two, forming a cross.
  18. Repeat the process with the remaining 4 sheets.
  19. Spread the chicken mixture evenly into the pan.
  20. Fold the overhanging layer of filo up and across the chicken, sheet by sheet, brushing with olive oil after each sheet is in place.
  21. Finish smoothing out the top with a final brushing of olive oil.
  22. Beat the egg yolk lightly and brush the top with the beaten yolk.
  23. Pierce the top in several places with a fork to allow steam to escape.
  24. Bake for 50 minutes, until the crust is crisp and golden.
  25. Let cool on a rack for 10 minutes before cutting.
  26. Serve hot or at room temperature.
