Note
Niter kebbeh is an Ethiopian spiced butter. If you cannot find it, regular butter works well, but adding a pinch of fenugreek, cumin, or coriander can mimic the flavor profile.
Adjust the amount of serrano chiles based on your heat preference. For a milder sauce, remove the seeds and membranes from the chiles before blending.
This dish pairs traditionally with injera, a spongy sourdough flatbread. It can also be served with rice or flatbreads.
