Description
A comforting festive soup that combines chicken broth, escarole, bite-sized meatballs, and an egg-Parmesan ribbon for a warming bowl.

Directions

Combine the ground chuck, bread crumbs, parsley, egg, water, Parmesan cheese, garlic powder, salt and pepper.

Mix thoroughly and shape into small meatballs.

Bring the chicken broth to a boil.

Add the chopped escarole.

Reduce the heat and simmer gently for 5 to 8 minutes.

Drop the meatballs into the broth a few at a time, stirring gently.

Simmer until the meatballs are cooked through.

Slowly pour the beaten egg and Parmesan mixture into the simmering broth in a thin, steady stream.
