Directions

  1. Trim excess fat from the pork loin and slice the meat into thin strips, approximately 2 x 1 x 1/8-inch.
  2. In a medium bowl, toss the pork strips with cornstarch and 1 teaspoon of low-sodium soy sauce until evenly coated.
  3. Cover the bowl and refrigerate the pork for 20 minutes to tenderize.
  4. Meanwhile, bring 1 inch of water to a boil in a saucepan; add the Chinese pea pods, cover, and boil for 1 minute.
  5. Drain the pea pods and immediately rinse them under cold water to stop the cooking process; drain well.
  6. Heat vegetable oil in a large nonstick skillet or wok over high heat.
  7. Add the marinated pork mixture, ginger, and garlic to the hot wok; stir-fry for about 3 minutes until the pork is no longer pink.
  8. Add sliced fresh mushrooms and sliced green onions to the wok; stir-fry for 2 more minutes.
  9. Add the drained pea pods, tofu cubes, oyster sauce, and remaining soy sauce; stir-fry for 1-2 minutes until heated through and well combined.
  10. Serve immediately while hot.
