Description

This Portuguese-inspired Garlic Chicken is a show-stopping centerpiece that balances savory depth with aromatic sweetness. A whole chicken is nestled atop a bed of thinly sliced onions and garlic, then slow-cooked in a luxurious reduction of port wine, brandy, Dijon mustard, and tomato paste. The long, gentle cooking process renders the meat incredibly tender, while the ham and golden raisins add subtle savory-sweet notes. Finished under the broiler for a crisp, golden skin, this dish delivers a robust, herbaceous flavor profile perfect for holiday gatherings or special weeknight dinners. Serve with crusty bread to soak up the thickened, glossy sauce.

Ingredients

Directions

  1. Prepare the aromatics by thinly slicing the onion and garlic.
  2. Rinse the whole chicken inside and out, then pat dry with paper towels.
  3. Tuck the wingtips under the body and tie the drumsticks together with kitchen twine.
  4. Place the sliced onions and garlic in the bottom of a slow cooker.
  5. Scatter chopped ham and golden raisins over the onion mixture.
  6. Place the prepared chicken on top of the onion and ham mixture.
  7. In a small bowl, whisk together port wine, brandy, Dijon mustard, and tomato paste.
  8. Pour the wine mixture evenly over the chicken.
  9. Cover the slow cooker and cook on LOW for 7.5 to 8 hours, until the meat near the thigh bone is very tender.
  10. Carefully lift the chicken out of the slow cooker and place it on a broiler pan rack.
  11. Broil the chicken 4-6 inches below the heat source for about 5 minutes, until the skin is golden brown.
  12. Transfer the browned chicken to a warm platter and keep covered.
  13. Skim and discard excess fat from the cooking liquid in the slow cooker.
  14. Mix cornstarch with cold water to create a slurry, then stir it into the cooking liquid.
  15. Increase the slow cooker setting to HIGH and cover.
  16. Cook for about 10 minutes, stirring 2 or 3 times, until the sauce thickens.
  17. Stir in red wine vinegar and season with salt and pepper to taste.
  18. Garnish the chicken with parsley sprigs and tomato wedges before carving.
  19. Top the carved chicken with some of the thickened sauce.
  20. Serve the remaining sauce in a gravy pitcher or bowl alongside the chicken.
