Potage Au Potiron
Description
This classic French Potage Au Potiron is the epitome of autumnal comfort. The deep, sweet flavor of ripe pumpkin is gently coaxed out by simmering with aromatic onions, carrots, and turnips in rich chicken stock. The result is a luxuriously smooth and velvety soup that feels both elegant and homey. Served traditionally in the hollowed-out pumpkin itself, it makes for a stunning centerpiece at dinner parties or a cozy weeknight meal. The addition of crisp, buttery croutons adds a delightful textural contrast to the creamy puree. It is simple to prepare yet sophisticated enough for special occasions, offering a warm embrace on chilly evenings.Ingredients
Directions
-
Cut off the top of the pumpkin to create a lid and reserve it.
-
Scoop out the seeds and strings with a large spoon or melon baller, discarding them.
-
Carefully scrape out the pumpkin flesh without breaking the shell, aiming for about 6 cups of pieces.
-
Set the hollow pumpkin shell and lid aside.
-
In a large casserole, melt 2 tablespoons of butter over medium heat.
-
Add chopped onion and sauté, stirring often, until softened and lightly golden, about 6 minutes.
-
Pour in dry white wine and simmer for 1 minute to deglaze the pan.
-
Add sliced turnips, carrots, and the reserved pumpkin flesh to the pot.
-
Pour in enough chicken stock to just cover the vegetables.
-
Season lightly with salt and white pepper.
-
Cover the pot and bring the liquid to a boil.
-
While the soup heats, cut French bread or rolls into thin wedges about 1/2-inch long.
-
In a large skillet, heat 3 tablespoons of butter over medium heat.
-
Add half of the bread pieces and toss constantly until lightly golden, about 5 minutes.
-
Stir these first batch of croutons directly into the boiling soup.
-
Sauté the remaining bread pieces in the leftover butter until golden, then set aside for garnish.
-
Reduce heat and let the soup boil gently, covered, for 1 hour until vegetables are very tender.
-
Carefully puree the mixture in a blender or food processor until completely smooth.
-
Return the pureed soup to a clean saucepan and stir in whipping cream.
-
Bring the soup to a gentle simmer to heat through.
-
Thin with additional stock if the consistency is too thick.
-
Adjust seasoning with salt and pepper to taste.
-
Ladle the hot soup into the reserved pumpkin shell and serve immediately, passing the remaining croutons separately.
