Ingredients

Directions

  1. Roast the red bell peppers by placing them under a broiler or rotating them over a gas flame until the skin blisters and is completely black on all sides.
  2. Place the roasted peppers in a paper bag for 15 minutes to steam and cool.
  3. Scrape away the charred skin from the peppers, then remove the seeds and membranes.
  4. In a blender or food processor, puree the roasted peppers, roasted garlic, and wine vinegar until smooth.
  5. Scrape the pepper puree into a bowl and set aside.
  6. In a large saucepan, bring 4 cups of water to a boil.
  7. Stir in the couscous and soy margarine, cover the pan, and remove from heat.
  8. Let stand for 10 minutes, then stir again to fluff the couscous.
  9. Add the red pepper puree, chopped onion, sea salt, and black pepper to the couscous and mix well until evenly combined.
  10. Lightly grease a ring mold and press the couscous mixture firmly into it.
  11. Refrigerate the mold for at least one hour to set.
  12. Combine the soy yogurt and chopped fresh dill in a small bowl to make the sauce.
  13. To serve, unmold the couscous ring onto a serving plate and fill the center with the lightly steamed vegetables.
  14. Serve with the dill yogurt sauce on the side or drizzled over the vegetables.
