Directions
-
Roast the red bell peppers by placing them under a broiler or rotating them over a gas flame until the skin blisters and is completely black on all sides.
-
Place the roasted peppers in a paper bag for 15 minutes to steam and cool.
-
Scrape away the charred skin from the peppers, then remove the seeds and membranes.
-
In a blender or food processor, puree the roasted peppers, roasted garlic, and wine vinegar until smooth.
-
Scrape the pepper puree into a bowl and set aside.
-
In a large saucepan, bring 4 cups of water to a boil.
-
Stir in the couscous and soy margarine, cover the pan, and remove from heat.
-
Let stand for 10 minutes, then stir again to fluff the couscous.
-
Add the red pepper puree, chopped onion, sea salt, and black pepper to the couscous and mix well until evenly combined.
-
Lightly grease a ring mold and press the couscous mixture firmly into it.
-
Refrigerate the mold for at least one hour to set.
-
Combine the soy yogurt and chopped fresh dill in a small bowl to make the sauce.
-
To serve, unmold the couscous ring onto a serving plate and fill the center with the lightly steamed vegetables.
-
Serve with the dill yogurt sauce on the side or drizzled over the vegetables.
