  1. Cream the softened butter until light and fluffy.
  2. Beat in the egg yolk and sour cream until well combined.
  3. Divide the dough into 4 equal balls, wrap them, and chill in the refrigerator for at least 3 hours or overnight.
  4. In a small bowl, mix the chopped walnuts, sugar, and cinnamon to create the filling.
  5. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  6. On a lightly floured surface, roll each dough ball into a circle.
  7. Cut each circle into 12 wedges.
  8. Place about 1/2 teaspoon of the walnut filling at the wide end of each wedge.
  9. Roll each wedge from the wide end toward the tip to form a crescent shape.
  10. Arrange the rugelach on the prepared baking sheet.
  11. Brush the tops with the reserved egg white and dip them into the remaining sugar mixture to coat.
  12. Bake for about 20 minutes, or until golden brown.
