Made with a base of rich custard infused with dark rum, it offers a smooth, velvety texture and a warm, aromatic flavor profile. The combination of butter, egg yolks, and superfine sugar creates a luscious foundation that is perfectly balanced by the bold kick of dark rum and the lightness of folded-in whipped cream. This elegant sauce is easy to prepare at home and serves as an impressive finish to any meal, bringing a touch of old-world charm to your table.Ingredients
Directions
-
In the top of a double boiler, whisk together the egg yolks and superfine sugar until well combined.
-
Place the bowl over simmering water and whisk constantly until the mixture is warm to the touch and the sugar has dissolved.
-
Add the chilled butter pieces one or two at a time, whisking vigorously until each addition is fully incorporated before adding more.
-
Continue whisking until the butter is completely melted and the mixture thickens slightly, about 1 to 2 minutes longer.
-
Remove the bowl from the heat and allow the mixture to cool to room temperature, whisking occasionally to prevent a skin from forming.
-
Once cooled, gradually whisk in the dark rum until smooth.
-
Whip the cream until soft peaks form, then gently fold it into the rum custard mixture.
-
Cover and chill in the refrigerator until ready to serve.

Note
Ensure the butter is chilled and cut into small pieces to help it emulsify properly into the warm egg mixture.
Do not overheat the egg mixture; it should be warm, not hot, to avoid scrambling the eggs.
This cream can be stored in an airtight container in the refrigerator for up to 2 days. Bring to room temperature before serving for best texture.
For a variation, add a teaspoon of vanilla extract or a sprinkle of nutmeg along with the rum.
