Rum And Banana Boat Souffle

Servings: 4 Difficulty: Advanced
A rich, boozy dessert served in natural banana skins with a creamy cornstarch custard
Rum and Banana Boat Souffle recipe image

This elegant Rum and Banana Boat Souffle transforms humble bananas into a sophisticated French-style dessert. The key to this dish is the “boat” technique, where the banana is carefully hollowed out and its peel is used as a natural serving vessel. Inside, a luscious filling made from pureed banana, light cream, cornstarch, and a splash of rum creates a texture reminiscent of a soft custard or pudding. The bright acidity of fresh lemon juice cuts through the sweetness, balancing the rich dairy and deep rum flavors. It is an impressive yet surprisingly simple make-ahead dessert that holds its shape beautifully in the oven. Perfect for romantic dinners, holiday gatherings, or any occasion where you want to impress guests with minimal effort. The natural sweetness of ripe bananas pairs perfectly with the warmth of the rum, creating a comforting and aromatic finale to your meal.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Wash the 4 bananas thoroughly and dry them completely.
  3. Carefully remove a very thin section of peel from the side of each banana, keeping the peel intact as much as possible.
  4. Gently slide the banana flesh out of the peel, trying not to tear the skin.
  5. Place one empty banana peel into each of 4 individual ramekins or baking dishes.
  6. Sprinkle the inside of each peel with a little lemon juice to prevent browning.
  7. In a blender or food processor, puree two of the banana halves (or enough banana flesh to equal about 1 cup) until smooth.
  8. In a small saucepan, combine 1 tablespoon powdered sugar, 1 tablespoon cornstarch, 1/2 cup light cream, and the pureed banana.
  9. Cook the mixture over medium heat, whisking constantly, until it thickens significantly and comes to a gentle boil.
  10. Remove from heat and stir in 2 tablespoons of rum. Let cool slightly.
  11. Beat the 2 egg yolks into the warm banana cream mixture until well combined.
  12. In a separate clean bowl, beat the 2 egg whites until stiff peaks form.
  13. Gently fold the beaten egg whites into the banana cream mixture, being careful not to deflate the air.
  14. Spoon the soufflé mixture into the banana peel boats, filling them nearly to the top.
  15. Bake for 20-25 minutes, or until the soufflés are puffed and lightly golden on top.
  16. Serve immediately while warm.
