Description

This classic Middle Eastern-inspired Tacheen is a stunning centerpiece side dish that combines fluffy basmati rice with the luxurious aroma of saffron. The rice is mixed with a creamy sauce made from eggs, yogurt, and oil, then baked until the bottom forms a delightful, golden-brown crust. It offers a perfect balance of texturessoft and custardy on the inside, with a satisfying crunch on the outside. Ideal for festive gatherings or elegant dinners, this dish pairs beautifully with grilled meats or roasted vegetables. Ingredients

Directions

  1. Place saffron threads in a small bowl and pour 1 tablespoon of hot water over them. Let soak for 10-15 minutes to release color and flavor.
  2. Rinse the basmati rice several times in cold water until the water runs clear. Drain well.
  3. In a medium saucepan, combine the rinsed rice and 2 1/2 cups of water. Bring to a boil over high heat.
  4. Once boiling, reduce heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is tender and all water is absorbed.
  5. Remove the rice from heat and fluff with a fork. Allow it to cool slightly so it can be handled.
  6. Preheat the oven to 400F (200C). Grease a 9x9 inch glass baking dish or a 2-quart Pyrex bowl with oil.
  7. In a large mixing bowl, beat the eggs until blended. Stir in the yogurt, oil, and the soaked saffron with its water until a smooth, creamy yellow sauce forms.
  8. Add the cooked rice to the egg-yogurt mixture and stir gently until every grain is evenly coated.
  9. Transfer the rice mixture into the prepared baking dish, spreading it out evenly.
  10. Bake in the preheated oven for 40 minutes, or until the top is set and the bottom has formed a golden-brown crust.
  11. Remove from the oven and let cool for 10 minutes to allow the rice to set.
  12. Run a knife around the edges to loosen the rice. Invert the dish onto a serving platter so the browned crust is on top.
  13. Garnish with fresh grapes, lettuce, or herbs if desired, and serve warm.

Note

The original recipe suggested adding diced chicken, but this version is kept vegetarian. If you wish to add protein, consider serving with roasted vegetables or grilled chicken on the side rather than mixing it in, as it can alter the texture of the baked crust.

For a vegan variation, substitute the eggs with a flax egg or commercial egg replacer, and use a plant-based yogurt. Note that the texture may be slightly less firm.

Ensure the rice is fully cooked and cooled slightly before mixing with the egg mixture to prevent the eggs from scrambling during baking.

This dish is best served immediately after inverting, while the crust is still crisp.
