Salse Bolognese
Description
This robust Bolognese-style sauce is a hearty departure from the traditional quick simmer, incorporating pork spare ribs for deep, savory flavor and tender meat. The combination of ground chuck, Italian sausage, and chopped onions creates a complex base that is enriched by a long, slow cook with tomato paste and juice. Aromatics like garlic, rosemary, and oregano infuse the sauce with classic Italian warmth. The result is a thick, luxurious sauce with chunks of deboned rib meat that melt in your mouth. Perfect for serving over sturdy pasta like pappardelle or lasagna, this dish is ideal for weekend cooking when you have time to let the flavors develop. It freezes beautifully, making it a fantastic make-ahead meal for busy weeknights.Ingredients
Directions
-
Trim excess fat from the pork spare ribs.
-
Cut the Italian sausage into 2-inch pieces.
-
Heat olive oil in a large 15-quart kettle or stockpot over medium-high heat.
-
Add the pork ribs and sausage pieces to the pot and brown on all sides.
-
Halfway through browning the meats, add the ground chuck and continue to brown until cooked through.
-
Add the chopped onions and minced garlic to the pot and saut until softened.
-
Stir in the tomato paste, tomato juice, oregano, rosemary, sugar, salt, and pepper.
-
Bring the mixture to a boil, then reduce the heat to low to maintain a gentle simmer.
-
Cover and simmer for four to five hours, stirring occasionally, until the sauce has thickened and the ribs are very tender.
-
Remove the ribs from the sauce and allow them to cool slightly.
-
Debone the ribs, discarding the bones and cartilage, and return the tender meat to the sauce.
-
Adjust seasoning with additional salt if needed.

Note
Allow the sauce to cool completely before refrigerating. Skim any excess fat that rises to the top after cooling for a lighter sauce.
This sauce freezes well. Store in airtight containers or freezer bags for up to 3 months. Thaw overnight in the refrigerator before reheating.
The original recipe mentions basil in the directions but not in the ingredients. Add 1-2 teaspoons of dried basil or 1/4 cup fresh chopped basil with the other spices if desired.
For a smoother sauce, you can blend the sauce partially after deboning the ribs, leaving some texture from the ground meat and rib meat.
Ensure the ribs are fully deboned before returning meat to the sauce to avoid any sharp bone fragments.
