Description

This hearty San Luis Green Chile Soup is a classic New Mexico-inspired dish that balances smoky, roasted heat with savory richness. The soup features Anaheim chilies, red bell peppers, and jalapeños, all roasted until charred to develop deep flavor before being peeled and diced. A golden roux made with butter, flour, and spices creates a creamy, comforting base. Tender pieces of chicken and pork add substantial protein and depth, making this a satisfying meal for cold evenings.

Ingredients

Directions

  1. Preheat the broiler to high. Arrange the Anaheim chilies, red bell pepper, and jalapeño on a baking sheet.
  2. Broil the peppers, turning occasionally, until the skins are blistered and charred on all sides.
  3. Transfer the roasted peppers to a plastic bag and seal it to steam for 10 minutes.
  4. Once cool enough to handle, peel off the charred skins, remove seeds, dice the peppers, and set aside.
  5. In a large skillet over medium heat, cook the diced salt pork until the fat is rendered and the pieces are crispy.
  6. Remove the salt pork with a slotted spoon and drain on a paper towel. Reserve the rendered fat in the skillet.
  7. Increase heat to medium-high and quickly sauté the sliced chicken and pork butt until browned on the outside.
  8. Remove the meat from the skillet and set aside with the salt pork.
  9. In a large saucepan over medium heat, melt the butter.
  10. Add the diced onion and cook, stirring occasionally, until soft and transparent, about 5 minutes.
  11. Sprinkle the flour over the onions and cook, stirring constantly, until the roux turns a golden brown color.
  12. Remove the saucepan from heat. Stir in the chili powder, cumin, minced garlic, and tomato sauce until well combined.
  13. Gradually whisk in the warm chicken broth, ensuring no lumps form, then return to heat.
  14. Bring the mixture to a simmer, stirring frequently.
  15. Add the diced roasted peppers, salt pork, chicken, and pork to the soup.
  16. Heat thoroughly until the meat is cooked through and the soup is hot.
  17. Stir in the diced tomatoes and minced cilantro.
  18. Simmer for a few more minutes to blend flavors. Serve hot.
