Add the pork cubes, whole onions, whole tomatoes, cubed potatoes, sliced chorizo sausage, ham bone, and ham scraps to the pot.

Fill the pot with water until it is about 3/4 full, ensuring there is enough liquid to cover all ingredients.

Once boiling, reduce the heat to low and let the soup simmer gently until the beans and potatoes are tender, approximately 1 to 1.5 hours.

Note
You can substitute white kidney beans or lentils for the red kidney beans if preferred.
If Chorizo de Bilbao is unavailable, any Spanish sausage with lard works well.
If you do not have fresh, juicy tomatoes, you can use 1 can (450g) of tomato sauce instead. Add this to the sautéed garlic and bring to a boil before adding to the main pot. Note that tomato sauce often contains vinegar, so you may not need to add extra.
If using tomato paste instead of fresh tomatoes or sauce, be sure to add a little vinegar for acidity.
